Així, si el producte acabat és el vi, el seu efecte es sempre negatiu, donat que afavoreix l increment d àcid acètic (acidesa volàtil). En canvi, si el producte acabat és el vinagre el seu efecte és positiu, donat que són les que transformen el vi en vinagre.
